Grilled Tuna with Herbed Aioli  

This is another classic and also pairs well with Dorado and Halibut

Ingredients
1/4 cup olive oil
2 tablespoons red wine vinegar
2 tablespoons chopped fresh basil
2 teaspoons chopped fresh thyme
2 teaspoons dried tarragon
2 large garlic cloves, finely chopped
1/3 cup mayonnaise.                                                                                                                                                                
4  7-oz tuna steaks (each about 1 inch thick) 
(also, this is great with dorado and halibut but just leave the skin on one side of the filet)  
Whisk together first 6 ingredients in dish big enough to put the steaks in marinade. Put mayonnaise separate bowl,  whisk 1-1/2 tablespoons marinade in the mayo for the aioli and set aside. Sprinkle fish with salt and pepper and place in marinade 1 hour at room temperature, turning fish every 15 minutes. Fire up the grill to a medium-high heat, oil up the grill rack with a little olive oil. Grill fish to your likeness (about 3 minutes per side for medium). Top fish with aioli and serve.

This goes great with a simple mixed green salad or with grilled asparagus basted with garlic infused olive oil.  Enjoy! The Pelican.
